Camencita is one of Spain's most recognisable brands with its ranges of spices gracing most food shops. The "Paellero" range of paella spices are the accepted "cheat" for making a great paella. Each sachet contains all the necessary spices you need but I often add some extra saffron to my paellas, for that extra touch.
Each sachet is sufficient for a 6/7portion paella with 5 x 4gr sachets in each box.

First paella...a baptism of fire that went out. 08 May 2021 | David
I did my paella on a BBQ. And franky, it was going too well. I had the recipe mapped out, I had the ingredients prepared, the BBQ was lit, the guests partially inebriated (outdoors...fear not). I had the chicken on and then the BBQ went out. And then it started to rain. So I panicked, relit the BBQ, finished the chicken and now mushy vegetables on the hob inside, and put all back in the pan (rainwater tipped out). The one thing I did right was heat up the stock. When I poured in the rice it lookled great +spice packets. So I relaxed and that was when I forgot to put the prawns in. And the mussels. And the garlic mayo. And the herbs.
But...it tasted truly great and my wet, sozzled and slurring guests thought is was the best paella they'd had all lockdown. Faint praise, since it was the only paella they'd had. But since they were talking about it some days later I am taking them at their word.
The ingredients from the Paella Company were faultless. Don't bother going elsewhere, you'll just make life hard for yourself.
I consider my effort a dry run (rain notwithstanding) so I'm feeling confident, and will be back for more.
Probably in June. When we can all go inside out of the rain.
